Summer Activities - Check!

Just after school started we finished off our summer activities list with a nature walk at Jordan River Parkway.  The walking portion made up a very small part of our time at the park, but we had a good time nonetheless.  The kids were much more interested in the play equipment.

We had a great summer!  We kept very busy, as I like to be, and have consequently raised my children to be.  Every couple days we were checking off an activity.  And once that was done we started a countdown until the next activity.  Our family favorites were: Lagoon (of course!), The Museum of Natural Curiosity, The Nickelcade, snowcones, camping and the farmer's market.  Now that we are back to our school schedules, we are doing much less, yet we are all more tired.  How does that work?  I guess when you are busy having fun, life doesn't seem to feel all that busy.

Recipe - Spinach and Bacon Quiche

I had a bunch of leftover spinach the other day, and a pie crust and bacon, so I googled a quiche recipe including these ingredients and came up with this winner from Paula Deen.  It turned out to be good, really good!  Even the kids gobbled it up, which surprised me since they have only been into "kid food" lately.  And I thought for sure a quiche wouldn't agree with their macaroni-and-cheese-peanut-butter-and-jelly-corn-dog only diet, but I was met with a refreshing response to dinner as they all raved about it.
 
Spinach and Bacon Quiche

6 large eggs, beaten
1 1/2 cups heavy cream
Salt and pepper
2 cups chopped fresh baby spinach, packed
1 pound bacon, cooked and crumbled
1 1/2 cups shredded Swiss cheese
1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate 
Preheat the oven to 375 degrees F.  Combine the eggs, cream, salt, and pepper in a blender. Layer the spinach, bacon and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.

Nancy and Randall's Sealing


Grandma Nancy and Randall were sealed for time and all eternity in the Logan temple, September 12.  Greg and I were able to attend the sealing session while family members watched our kids in the waiting room.  Afterwards we had pictures on the temple grounds with both sides of the family, and then went on to a luncheon at The Blue Bird.  The day was lovely!  They are so twitterpated and in love and we are so very happy for them!

Four Year Old Preschool

Brody started his second year of preschool today.  He was so ready and so excited.  Like the dork that I am, I took him last Wednesday thinking it was his first day, took pictures, presented a new backpack and everything.  Brody took it well when we realized my mistake.

He is attending the same preschool as last year, and has the same teachers: Mrs. Mele and Mrs. Autumn.  He is happy about that.  This yea
r he goes to school for three hours instead of two like last year.  He is also happy about that.

When I picked him up today he didn't want to leave.  The teachers told me that they could see a big difference in Brody this year as compared to last year.  They said he was much more sure of himself, more confident and more social.  He is growing up for sure!  He also has grown quite a bit in height!  He is much taller than the other children in class.  I think this year of preschool will be great for him.  He is turning into such a smart and imaginative little boy.  I look forward to all that he will learn this year!
