My new found love of Philly Cheesesteaks lead me to this fabulous recipe on Pinterest. Of course, the kids wouldn't eat it, because they're boogers who only want macaroni and cheese, but Greg and I were loving dinner tonight! These stuffed peppers were easy preparation, fast to cook, and tasted great!
Grilled Philly Cheesesteak Stuffed Peppers
2 green peppers
1 large onion, cut into slices
8 oz. roast beef/left over steak thinly sliced/or fajita steak meat/etc.
2-3 teaspoons Montreal Steak Seasoning
8 slices of provolone cheese
drizzle of olive oil
Preheat grill. While grill is heating, cut the pepper in half and scoop out insides. Line each half with a slice of provolone cheese. In a skillet heat olive oil. Sauté onions, sprinkled with steak seasoning, until clear. Add the beef to onions and sauté together for just a minute. Fill peppers with steak and onion mixture. Top each pepper with a slice of provolone. Cook on grill for about 6-8 minutes until pepper is cooked to desired tenderness and cheese is melted. Peppers can also be baked in the oven at 375 degrees for about 20 minutes.
