Recipe - Oatmeal Nut Whole Wheat Pancakes

We love these pancakes. They are more nutritious than regular pancakes and very, very filling. This recipe was a wedding gift (along with a griddle) to Greg and I from our dear friends Rex and Debbie Bailey. I made these for dinner one evening this month during a particularly nasty blizzard since they were a quick fix and we weren't certain how long we would have our electricity.

Oatmeal Nut Whole Wheat Pancakes

1 1/2 c. whole wheat flour
2 t. baking powder
1/2 t. salt
2 c. milk
1/4 c. melted butter
1 T. honey
2 eggs
1 c. old fashioned rolled oats
1 c. finely chopped walnuts

In a medium bowl stir together whole wheat flour, baking powder and salt. Add milk, eggs, butter and honey and beat until smooth. Stir in oats and nuts. Cook on a hot griddle until golden brown. Serve with butter and syrup.

we love whole wheat pancakes at our house. in fact, i'm not sure that my kids know there are other kinds. i'm totally trying this soon.
